Homemade pizza
Good day everyone. There haven’t been any chef blogs on the site for a long time. I can explain my absence by serving in the army. The year is over, and you can return to your favorite hobby – cooking. As a dish, I chose pizza, but not the classic one that you can find in pizzerias, but homemade. I bring to your attention two types of it.
And first, a little history.
The roots of the edible symbol of Italy go back to ancient times. More than 6,000 years ago, Egyptians, Greeks, Indians, and Jews baked flatbreads with various fillings in stone ovens – onions, potatoes, dates, olives, butter. The ancient Romans called this dish “focaccia” (panis focacius – “bread baked in the hearth”), and it was very popular among soldiers and peasants. These were the first types of pizzas. They cannot be 100% called the pizza that we are used to seeing, but they have become its basis.
The word “Pizza” itself appeared in 997. n.uh. in the small port town of Gaeta, in southern Italy. The first written mention of the word pizza was recorded there. In the document, the son of a feudal lord promises twelve pizzas to the local bishop as an annual tax. We can say that the word pizza originally had something to do with finance. Currently, in Sicily and southern Italy, the word pizzo (from the Sicilian pizzu – beak) refers to the tribute that small businesses pay to the mafia for “protection”.
If you look at the etymological dictionary of the Italian language, the word pizza comes from the Latin word pinsere – to pound. Other researchers have suggested that pizza comes from the Lombard word bizzo or pizzo, which means “to eat something in one bite or bite.”. The word pizza is also associated in origin with the Greek pitta flatbread.
Today, the word pizza ranks first among the words in the Italian language that are most widespread and popular throughout the world.
An important role in the history of pizza was played by the Great Geographical Discoveries, namely tomatoes, which came to Europe in the 15th century from South America. Two centuries later, due to the prejudices of Europeans who considered these vegetables poisonous, they managed to get onto the table. In the 17th century, the classic pizza with tomatoes was first prepared in Naples. And in 1830, the first pizzeria “Port Alba” was opened in Naples, which still operates to this day. It dates back to 1738, when it was a street stand selling pizza.
At the beginning of the 19th century, many residents of Southern Italy migrated to the United States, hoping for a better life on New Earth. Together with them, pizza reached the USA and gained popularity among local residents there. In 1905, the first pizzeria was opened in New York, which had its own recipe, called “American” or “New York pizza.”.

Thanks to the efforts of Americans, pizza gained worldwide popularity and became one of the most popular types of fast food.
From history we move on to cooking. Like I said before, it’s going to be homemade pizza. For it, I took yeast dough, since it will taste better with it, and a variety of products for filling. If you cook yourself, you can use any products you like. As an example, I’ll tell you how my two pizzas were prepared and what kitchen equipment was used.
Homemade pizza recipe
Ingredients for the first pizza:
• Dough – 350 grams
• Boiled sausage – about 100 grams
• Raw smoked sausage – about 100 grams
• Sausages – 2 pieces
• Hard cheese – about 100 grams
• Pickled gherkins – 5 pieces
• Tomatoes – 2 pieces
• Onion – ½ head
• Sweet pepper – 1 piece
• Ketchup – 2 tablespoons
• Mayonnaise – 1 tablespoon
• Vegetable oil – ¼ teaspoon
• Spices – to taste
Dishes:
• Baking tray
• Cutting board
• Knife
• Spoon
• Bowl
• Grater
• Rolling pin
Let’s start with the test. You can knead it yourself or, if you don’t have time/laziness, buy it ready-made in the store. Dough recipe:
Yeast – 1 teaspoon; flour – 500 grams; water – 250 grams; egg – 1 piece; vegetable oil – 5 tablespoons; salt – 1/2 teaspoon; sugar – tablespoon.
First, add the yeast to warm water (50 ml) with sugar and leave for about 20 minutes. It all depends on the yeast, since it determines how long it will take to prepare the dough. Then sift the flour into a large bowl, pour in the remaining water, the egg with salt and butter. Then add the prepared yeast. Knead well and leave in a warm place for one hour. After the time has passed, you can work with the test.
As for the filling. Cut the sausage into small cubes, sausages with gherkins – into a semicircle. I washed the vegetables, peeled the onions and cut them into half rings with the tomatoes. Remove the seeds from the pepper and cut into small pieces.
Place the dough on a pre-greased baking sheet and roll out. Add ketchup with mayonnaise on top and spread thoroughly. Next, spread the filling evenly and sprinkle with grated cheese. Place in the oven at 200 degrees for 25-30 minutes.
While the first pizza was being prepared, I decided to prepare the second version of homemade pizza.
Ingredients for the second pizza:
• Dough – 350 grams
• Canned pineapples – about 250 grams
• Canned corn – about 150 grams
• Sausages – 4 pieces
• Hard cheese – about 100 grams
• Tomatoes – 3 pieces
• Onion – ½ head
• Sweet pepper – 2 pieces
• Ketchup – 2 tablespoons
• Mayonnaise – 1 tablespoon
• Vegetable oil – ¼ teaspoon
• Spices – to taste
Dishes:
• Baking tray
• Cutting board
• Knife
• Spoon
• Bowl
• Grater
• Rolling pin
Tomatoes, onions and sausages semicircle mode. Sweet pepper in small pieces. Drain liquid from corn and pineapples.
Grease a baking sheet with oil and roll out the dough on it. Add ketchup and mayonnaise and spread evenly. Distribute the filling as follows: sausages, onions, corn, peppers, pineapples, tomatoes and grated cheese on top. Bake in the oven the same way – 25-30 minutes at 200 degrees.
